【橡木桶：唔止係容器，仲係調味料】 放心，正規嘅釀酒師係唔會亂加香精嘅。嗰啲令你著迷嘅香氣，其實係來自 橡木桶 (Oak Barrel) 嘅化學作用。 喺釀酒界，橡木桶就好似廚師手上嘅「鹽同胡椒」，甚至係成支酒嘅「化妝品」。

【科學拆解：Lactones 與 Vanillin】 要了解呢個魔法，我哋要睇睇橡木 (Oak) 本身嘅成分：

  1. 橡木內酯 (Oak Lactones)： 這是橡木獨有嘅揮發性化合物。如果濃度高，你會聞到好明顯嘅 椰子 (Coconut) 甚至係 防曬油 嘅味！這在美國橡木桶 (American Oak) 特別常見。

  2. 香草醛 (Vanillin)： 沒錯，橡木天然含有同雲呢拿豆一模一樣嘅化學分子。當酒精同木材接觸，就會萃取這些香草醛，令紅酒帶有甜美嘅 雲呢拿 (Vanilla) 香氣。
