【冷知識】飲到底見到有「玻璃碎」？淡定！你遇到傳說中嘅「酒鑽石」喇！

你有無試過咁嘅情景：開咗支靚酒，同班 Friend 嘆到尾聲，諗住倒埋最後一杯盡興。點知一望個杯底，咦？點解有啲閃閃令、硬硬地嘅顆粒？第一反應即刻嚇到個心離一離：「弊傢伙！唔通支酒個樽裂咗有玻璃碎？頭先飲落肚嗰啲有無事架？」

先唔好自亂陣腳，亦都唔好拿拿臨衝去舖頭投訴住。因為你好大機會唔係遇到「玻璃碎」，而係遇到葡萄酒界嘅天然寶石——「酒鑽石」(Wine Diamonds)。

所謂嘅「酒鑽石」，學名叫做酒石酸鹽 (Tartrates)。聽落好化學？其實佢係由提子皮同果肉入面天然存在嘅「酒石酸」(Tartaric Acid) 同「鉀」(Potassium) 結合而成。

呢啲物質本身就係葡萄酒結構嘅一部分，負責提供嗰種爽脆嘅酸度。當支酒處於低溫環境（例如你將支白酒雪得好凍，或者運送過程氣溫低），呢啲酸性物質就會「抱團取暖」，結晶變成固體沉澱落樽底。

喺一啲大量生產嘅平價酒，酒莊為咗費事解釋，通常會喺入樽前做一個叫「冷安定」(Cold Stabilization) 嘅工序——即係特登雪凍支酒，逼啲結晶出嚟然後隔走佢。酒係清咗，但亦都有機會帶走埋部分細緻嘅香氣同風味。

相反，好多頂級酒莊（尤其係崇尚自然、或者舊世界嘅 Fine Wines），佢哋覺得「原汁原味」先係對飲家嘅尊重。佢哋寧願保留支酒最完整嘅結構，都唔會做過度嘅過濾處理。

所以，如果你喺樽底見到呢啲晶體，其實係代表呢支酒無經過過度的人工修飾，係釀酒師對品質嘅堅持！喺歐洲，好多資深飲家見到「酒鑽石」不知幾開心，因為呢個係高品質、純天然嘅象徵，就好似食刺身見到有少少魚油結晶咁，係好嘢嚟架！

下次再見到呢啲「玻璃碎」，唔使驚青，只要輕輕將酒液倒出嚟，避開樽底啲沉澱物就得（雖然食落去無害，但口感沙沙地都係唔好食啦）。
