【尋醇記】紅酒界都有「回馬槍」？教你 Double Decant 絕學備戰 BYOB！⚔️🍷

飲紅酒同練武功一樣，講究「見招拆招」。 有時面對一啲「性格剛烈」嘅對手（單寧強勁嘅新酒），或者要出席一場重要嘅「決鬥」（自備酒水 BYOB 的飯局），單單靠開瓶透氣未必夠做。呢個時候，你就需要用到紅酒界《墨子劍法》入面最實用嘅一招—— Double Decant（雙重醒酒），我哋俗稱「回馬槍」！

好多人以為醒酒（Decanting）就係將枝酒倒落個水晶樽度就算。其實，如果你識得將枝酒「來回地獄又折返人間」，效果隨時昇華幾倍。

什麼是 Double Decant（雙重醒酒）？

簡單講，就係：酒樽 ➡️ 醒酒器 ➡️ 酒樽。 將酒倒出嚟醒完，再倒返入原裝樽。呢招「回馬槍」有兩大絕妙之處：

  1. 針對「硬淨」新酒： 如果你手上係一枝新年份嘅 Bordeaux 左岸、Napa Cab 或者意大利 Barolo，佢哋單寧通常好緊（Closed）。Double Decant 令酒液經歷兩次劇烈嘅空氣接觸，可以極速磨平棱角，令香氣「爆」出嚟，比一般醒酒更有效率。

  2. BYOB 飯局神器： 香港人鍾意帶酒食飯。如果你喺屋企做定 Double Decant，順手隔埋渣（Sediment），去到餐廳就唔駛等，一開即飲！最重要係，你可以拎住個原裝樽倒酒，大家見到個名莊 Label，成件事即刻 Grand 晒，唔駛拎住個笨重 Decanter 搭車咁狼狽。

心法口訣（操作步驟）：

  1. 出劍（第一醒）： 將酒倒入醒酒器。如果係新酒，可以倒快少少；如果係有渣嘅舊酒，就要對住燈光慢慢倒，將渣留喺樽底。

  2. 洗劍（洗樽）： 呢步好關鍵！原裝樽入面會有殘留酒渣。用少少蒸餾水沖洗乾淨個樽，然後徹底瀝乾（千祈唔好用自來水，費事有氯氣味）。專業啲嘅，可以用少少同款紅酒「潤」一次個樽。

  3. 回劍（第二醒）： 當枝酒喺醒酒器呼吸夠之後，利用酒漏斗（Funnel）將酒倒返入去原裝酒樽。

  4. 封劍（塞回酒塞）： 塞返個 Cork，搞掂！出門口！
