[Silver Heights Bloom Sparkling Rice 2023 (開屏起泡酒)]

Silver Heights Vineyard was founded by Gao Lin and his daughter Gao Yuan in 2007, and is currently managed by Gao Yuan.Currently, Gao Yuan serves as both the owner and winemaker of the winery. She studied winemaking in Bordeaux, France, obtained the French National Oenologist Diploma, and interned for a period at the renowned 1855 Third Growth estate, Chateau Calon Segur.

The vineyard of the winery is located on the eastern foothills of the Helan Mountains, at an altitude of 1,200 meters, in the grape-growing golden zone at 38°N latitude.The climate in this region is exceptionally dry, with ample sunlight and rare rainfall. The temperature difference between day and night can reach up to 15 ºC, which is conducive to the accumulation of sugars and phenolic compounds in the grape berries, allowing the grapes to maintain a high level of acidity even when fully ripe.The main soil types in the vineyard are clay loam, sandy gravel soil, and pebbles, with low organic matter content, making it relatively barren.Due to the cold winter, to prevent the grapevines from dying, the winery will use the method of burying the vines. They will be pressed down to the ground and buried 30 centimeters underground to prevent the vines and root system from freezing.When spring arrives, the soil is dug up to allow the grapevines to return to their original state.The winery adheres to the concept of organic farming, strictly controlling the use of chemical fertilizers and pesticides during the grape cultivation process, and implementing meticulous manual management for each grapevine.The main grape varieties planted in the vineyard are Cabernet Sauvignon, Merlot, Chardonnay, and Riesling.

Brewing varieties:

80% Chardonnay, 8% Ningxia rice wine, 12% Pinot Noir

Brewing process:

Primary fermentation is conducted by natural environmental yeasts, and each component can be brewed separately.

As the Chardonnay skins are left in contact for an extended period, the various grape varieties are eventually blended together, adding a touch of fresh, semi-dry rice wine to invigorate the wine's natural process.

Before the final release, these bottles will be kept in the cellar for a few months.

Tasting notes:

The wine exudes pure and elegant aromas of apple, peach, and blackberry, complemented by the scent of freshly baked bread and the refined mineral taste of raw oyster shells.

The dense and abundant bubbles intertwine in the mouth, bringing wave after wave of fruit aromas like the ebb and flow of the tide.The unique Ningxia rice wine imparts a silky-smooth texture to the body, with distinctive flavors of nuts, rice, and white cheese, combined with the tastes of salty lemon, sweet melon, and red plum, creating a long and rich aftertaste.
