The average vine age is 40 years, and the grapes are all hand-picked before being placed in large stainless steel barrels for fermentation.Since 2005, the second wine of Chateau Pavie has been renamed "Aromes de Pavie."Mainly from younger vines, but vinified as rigorously as the grand vin.The taste is smooth, balanced, and elegant, with aromas of cigar, blackcurrant, and black cherry.
