Chateau D’Yquem is renowned for its complex, concentrated, and quite sweet taste.The wine's crisp acidity balances its sweetness, making it highly age-worthy; certain vintages of D’Yquem can even be cellared for a century or more.As time passes, the aroma and flavor of Chateau D’Yquem become more complex and enchanting, and the color of the wine gradually transitions from bright straw yellow to golden brown, amber, and caramel.
"The climate in 1997 was unusual, being a relatively warm and dry year, which is comparable to this year's very slow onset of botrytis." Warm temperatures brought ample sweetness, and the late-season rains ultimately stimulated the spread of noble rot, making it a potentially very good Sauternes vintage. However, strict selection was crucial, ultimately allowing d'Yquem to produce impressive wines far above the standard of that vintage.
