This wine is made from hand-picked grapes, sorted, and then destemmed.During the maceration process, slight crushing occurs.Soaking before fermentation continues for 10 days at 8°C.After alcoholic fermentation, the classic winemaking process involves gentle daily pumping over to promote extraction.After malolactic fermentation in oak barrels, the pomace will continue to age for 4 months.
Chevalier de Lascombes 2021 is aged in new oak barrels, with distinct notes of new oak toast, concentrated coffee roast, and sweet black fruits, along with a hint of tobacco leaves and wild rose bushes.The black fruit (blackcurrant) has a soft fruitiness, with a hint of violet floral aroma on the finish.This wine seems more reserved, with a rich and distinctly excellent profile. The finish is medium, the tannins are moderate, making it a very easy-to-drink wine.
