[Cheval Blanc 2007]
Robert Parker rating: 92/100
Chateau Cheval Blanc is one of the four Premier Grand Cru Classé A wineries in the Bordeaux Saint-Emilion region. The soil of Chateau Cheval Blanc is quite diverse, with gravel, clay, and sandy areas. All the soil is underlain by hard sedimentary rock. After fermenting and soaking in large stainless steel barrels for 4 weeks, the wine is aged in new oak barrels for 18 months. It is one of the most famous wines in the world made from Cabernet Franc. The release of Cheval Blanc requires a minimum of 10 years of bottle aging, and wines from the best harvests can even be stored for over 50 years.
"Chateau Cheval Blanc 2007 has an exquisite bouquet of red berries, leather, iron filings, and orange peel, possibly superior to other Saint-Emilion reds, with great appeal; its body is medium, and the tannins are very granular."This is a tight red wine, with Cabernet Franc forming its backbone, exuding flavors of sweet pepper and spice, leading to a captivating finish.I believe it may have reached its peak a few years ago, so it can be enjoyed now and for the next 15 years.
Grape variety:
53% Cabernet Franc and 47% Merlot
