📚🍷 【書展特輯】點解紅酒會有「書卷味」或「雪茄盒味」?

下個星期就係香港書展啦!
講起書,你知唔知有啲頂級紅酒,真係飲得出「舊書本」甚至「雪茄盒」嘅味道?

🧐呢啲獨特香氣從何而來?

紅酒嘅香氣分為三個層次,而「書卷味」同「雪茄盒味」就屬於最珍貴嘅第三層香氣 (Tertiary Aromas)。
呢啲香氣唔係嚟自提子本身,而係紅酒喺橡木桶 (Oak Barrels) 同埋酒樽內長時間陳年 (Bottle Aging) 嘅過程中,慢慢轉化出嚟嘅複雜風味。

•雪茄盒味 (Cigar Box):通常嚟自法國橡木桶,經過微量氧氣同單寧嘅結合,散發出一種類似高級雪茄盒嘅木質同煙草香氣。

•皮革 / 舊書本味 (Leather / Old Books):紅酒喺樽內陳放 10 年、甚至 20 年以上,新鮮果香會褪去,轉化成更深沉、泥土感嘅香氣,令人聯想起圖書館或者舊皮書。

想體驗呢種「書香伴酒香」嘅層次?首選一定係陳年波爾多紅酒 (Aged Bordeaux),特別係以 Cabernet Sauvignon 為主嘅左岸列級莊 (Grand Cru Classé)。佢哋強勁嘅單寧,正正需要歲月去打磨,先會散發出迷人嘅雪茄盒同皮革香。
