Due to the extremely time-consuming nature of the distillation method, production was scarce, and for nearly a century after its establishment, only a small proportion was used to make single malt whisky.Mortlach aged 12, through the dual maturation in American and European oak barrels, creates a round and delicate exceptional flavor.

Nose: Fresh honeysuckle, peach, orange peel, and clean cotton sheets with vanilla taffy. There is a sense of weight, along with faint minerality and subtle saltiness. The spices are mild but still influenced by the sherry cask—cinnamon and ginger.

Flavor: There is a taste of canned fruits—peaches and apricots, along with mango juice, tobacco leaves, and gingerbread. Chocolate, cinnamon, and ginger spices appear in the mid-palate, while creamy toffee and floral oiliness combine with raisins and sultanas. When diluted, there is a malty taste.
