【除夕大餐】牛扒定海鮮？3 分鐘學識 Wine Pairing 必勝法則

踏入 2025 年嘅最後倒數階段，相信大家個心都已經飛咗去放假 Mode！🥂 辛苦咗成一年，除夕夜 (New Year's Eve) 這一餐絕對係重頭戲。無論你係 Book 咗由米芝蓮大廚發辦嘅 Fine Dining，定係約埋班 Friend 喺屋企煮由 A5 和牛同法國生蠔組成嘅豪華大餐，重點都係一樣：要慰勞自己！

不過，好多人肯花幾千蚊買食材，但揀酒個陣就求求其其，結果...... 食生蠔配咗支單寧重嘅紅酒，成口鐵鏽味；鋸和牛配咗支太輕身嘅酒，完全被啲油膩感蓋過。

🥩 Team Meat：食肉獸的「解膩」攻略

如果你今晚嘅主菜係 肉眼扒 (Ribeye)、西冷 (Sirloin) 甚至係油脂爆炸嘅 A5 和牛，你需要嘅係一支有「肌肉感」嘅紅酒。

為甚麼要配紅酒？ 原理好簡單：紅酒裡面嘅 單寧 (Tannins) 係油脂嘅剋星。當你食完一啖充滿油花嘅牛扒，口腔會好油膩，這時候飲一啖單寧強勁嘅紅酒，單寧會依附喺蛋白質上面，帶走油膩感，令你每一啖肉都好似第一啖咁好食。這就是所謂嘅「刷牙感」 (Palate Cleansing)。

🍷 必勝推介：

1. 美國 Napa Valley Cabernet Sauvignon (納帕谷赤霞珠) 如果你食嘅係炭燒牛扒或者美式 Prime Rib，Napa Cab 係你不二之選。佢哋通常果味濃郁 (Fruit-forward)，帶有黑加侖子、雲呢拿同橡木桶香，酒體飽滿厚身，絕對鎮得住大塊肉。

2. 法國 Bordeaux Left Bank (波爾多左岸) 如果你追求優雅，或者食緊慢煮牛臉頰、威靈頓牛柳，波爾多左岸 (以 Cabernet 為主) 嘅酒會比較適合。佢哋除咗果香，仲多咗份雪茄盒、鉛筆芯嘅複雜香氣，層次感更豐富，飲落去會覺得自己特別有 Taste。

🦞 Team Seafood：鮮味控的「提鮮」秘技

如果你係海鮮控，除夕夜準備咗 生蠔 (Oysters)、龍蝦 (Lobster)、刺身 或者 香煎帶子，咁你就一定要避開紅酒 (尤其係重單寧嘅)！因為紅酒嘅單寧遇到海鮮嘅鮮味 (Umami)，會產生一種令人極不愉快嘅金屬鐵鏽味。

為甚麼要配白酒 / 氣泡酒？ 海鮮需要嘅係 酸度 (Acidity) 同 礦物感 (Minerality)。酸度就好似檸檬汁咁，可以去腥提鮮；而礦物感就可以呼應海鮮本身嘅海洋鹹味。

🥂 必勝推介：

1. 法國 Chablis (莎比利) 講到生蠔，Chablis 認第二，無人敢認第一！產自法國布勃艮第最北面，土壤充滿遠古海洋生物化石 (Kimmeridgian soil)，所以 Chablis 天生就帶有一種獨特嘅礦石味同火石味。佢嘅酸度凌厲，飲落去好似咬咗啖青蘋果咁爽，配生蠔簡直係神仙組合 (Heavenly Match)！

2. Blanc de Blancs Champagne (白中白香檳) 如果係食龍蝦、蟹腳或者帶子，香檳係最佳選擇。尤其係由 100% Chardonnay 釀造嘅 Blanc de Blancs，氣泡細緻，酸度優雅，可以中和龍蝦肉嘅鮮甜，而且除夕開香檳，個氣氛即刻贏晒！

💡 終極難題：如果有肉又有魚點算？

好多時食飯唔係獨食，如果同另外一半撐枱腳，一個想食牛，一個想食魚，無理由開兩支酒飲唔晒架？

Rosé Champagne： 帶有少少紅果味，酒體比一般香檳厚少少，配海鮮無問題，配鴨胸或者瘦少少嘅牛柳都勉強得住，最緊要係顏色靚，夠浪漫！💖
Pinot Noir (例如 Burgundy 或 New Zealand)： 單寧低、酸度高。配煎三文魚一流，配牛肉亦唔會打交，係紅酒界嘅親善大使。
